Ask The Kitchen

Questions people ask before they order

The short answers. If yours isn't here, that's what the walk-through is for.

01 I've never opened a restaurant before. Can HMBL help me from scratch?

Yes. That's exactly where we add the most value.

You bring the vision and the investment. We bring the experience to turn it into a working restaurant business — from concept and menu to kitchen, team, systems and launch.

You don't need to know how to build a restaurant. You need the right people around you who do.

02 Can you tell me if my restaurant idea is actually worth investing in?

Yes — and we will tell you if it isn't.

Before you spend heavily on interiors, equipment or rent, we pressure-test the idea against the market, location, customer, pricing, competition and unit economics.

If the idea needs changing, we'll say so. We'd rather challenge your idea before you invest ₹1 crore than watch you lose it after opening.

03 What exactly does HMBL handle?

Almost everything required to turn a restaurant idea into an operating business.

Concept. Positioning. Menu. Kitchen. Branding. Vendors. Hiring. Training. SOPs. Licensing coordination. Marketing. Launch. Operations.

You don't need to coordinate five different consultants and hope they work well together. HMBL brings the pieces together.

04 Do you only give advice, or do you actually execute?

We execute.

A PowerPoint presentation doesn't open a restaurant. We work with your architects, vendors, chefs, contractors and team to make sure the decisions actually get implemented.

Depending on your engagement, we can stay involved well beyond opening. Our job isn't to tell you what should happen. It's to help make it happen.

05 How do you decide what kind of restaurant I should open?

We don't start with the menu. We start with the opportunity.

Location. Customer. Spending power. Competition. Footfall. Delivery potential. Investment. Operating model. Then we build the concept around those realities.

Because a concept that looks great on paper but doesn't work at the location is simply an expensive mistake.

06 Can HMBL help me choose my location?

Yes. And we strongly recommend involving us before you sign the lease.

The wrong location can kill a good restaurant. We evaluate the catchment, visibility, access, competition, footfall, delivery potential, rent and sales potential before you commit.

Don't choose a property because you like it. Choose it because the business works there.

07 How much does it actually cost to open a restaurant?

We'll tell you what the business needs — not what you want to hear.

The investment depends on the format, location, size, cuisine and operating model. We build the CAPEX and working-capital requirement before you start spending, so you know what you're getting into.

And importantly, we'll identify where you can spend less without compromising the business. More money spent does not automatically mean a better restaurant.

08 How do you stop me from overspending?

By making you justify every major rupee before you spend it.

First-time founders often overspend on interiors, equipment and things customers never notice — while underfunding working capital, kitchen efficiency and marketing.

We design the operation first and spend accordingly. The goal isn't the most expensive restaurant. It's the best-performing one.

09 Will you build the financial model for my restaurant?

Yes. And you should never open without one.

We'll establish your expected investment, costs, margins, break-even sales and required order volumes. That tells you exactly what the restaurant needs to achieve every month.

Because "people will love the food" is not a business plan.

10 Who develops the menu and recipes?

We do — alongside the right culinary talent for the concept.

We look beyond taste. Every dish needs to work on food cost, portion size, preparation time, consistency, kitchen capacity and customer demand.

A dish that tastes brilliant but costs too much or takes eight minutes to produce isn't a good restaurant dish. We build menus that customers want to eat and businesses can afford to sell.

11 Can you help me hire and train my team?

Yes.

We'll help you determine who you actually need, what each role is responsible for and how the team should be trained. More importantly, we build systems around the team.

Because if your restaurant only works when one particular chef is present, you don't own a system — you own a dependency.

12 Will you create the SOPs for my restaurant?

Yes — but we don't believe in creating SOPs that sit in a folder and collect dust.

We build practical systems for kitchen, service, hygiene, inventory, opening and closing, purchasing and day-to-day operations. Then we train the team and audit whether they're being followed.

A system only matters if the restaurant actually runs on it.

13 Do you stay involved after the restaurant opens?

If you want us to, yes.

Opening is not the finish line. It's when the real data starts coming in. We can stay involved in operations, audits, training, marketing, menu performance, cost control and optimisation.

Because the first version of your restaurant won't be perfect. The best restaurants are built by constantly improving the first version.

14 Why should I choose HMBL over another restaurant consultant?

Because we don't see ourselves as consultants sitting on the sidelines. We think like operators.

We care about the customer's experience, but we care just as much about food cost, labour, throughput, margins, systems and repeatability.

We're not here to make your restaurant look good on paper. We're here to make the business work.

15 How involved will I need to be throughout the project?

As involved as you want to be — but you don't need to run the project yourself.

You should be involved in the big decisions: the concept, investment, positioning and brand. We can take responsibility for the day-to-day coordination and execution.

Our goal is simple: you should feel in control of your restaurant without having to become its project manager.
